  • 3 cups all-purpose unbleached flour
  • 4 tbsp olive oil
  • 12 oz blonde beer
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 1 1/2 cup chopped green olives stuffed with minced pimiento
This Olive beer Bread is proof that not all addictions are bad. If you love olives as I do, it is more likely you will be craving this Olive Beer bread every single day! 
Olives and beer, this is a match made in heaven – two of my favorite flavors combined in one gorgeous bread loaf. It melts in your mouth, and it fills your home with a wonderful aroma of fresh bread. There is no rising time, no kneading, ready from scratch to table in one hour. It does not get easier than this!
Make sure the beer is at room temperature – this is important! The cold beer will mess up with the baking powder, and the rising of the bread will be seriously compromised. I keep in my pantry a few beer bottles just for this recipe. Do not overmix the batter; mix just enough to combine all ingredients.
Make a double batch to have an extra loaf for a kitchen gift or slice it up and freeze. When you crave a savory wonder, just remove it from the freezer and microwave it for a couple of minutes and all the fluffiness will be back on your plate.
  • Preheat oven to 375F (190C).
  • Grease a 9×5 inch (23×12 cm) loaf pan.
  • Whisk the flour, salt, and baking powder in a large bowl. Add 3 tablespoons of olive oil, beer and, using a spatula, mix to combine, about one minute. Do not overmix because it will compromise the rise and texture of the bread. Gently fold in the olives. Pour the batter into the loaf pan and bake for 40 minutes. Remove from oven, brush the top with the remaining tablespoon of olive oil and bake for 10 more minutes or until a toothpick inserted halfway through the top of the bread comes clean. Remove from stove and let it rest in a cooling rack to room temperature before removing it from loaf pan and slicing it.
