- Use the standard S-shape blade in your food processor to chop the beet very thin, almost pureed. Break the ricotta with a fork, smashing it thin. Add the ricotta, olive oil, lemon zest, lemon juice, salt, and pepper to the beets, and stir well until well combined in a smooth texture. Take it to the fridge for one hour before serving with your favorite crackers or bread slices.
